这款饼干不用太多黄油,而且也没有添加臭粉和泡打粉,所以吃起来没有很酥,但是却非常脆,操作起来省时又简单,制作过程中有需要注意的地方我在步骤中划重点哈

用料

低筋面粉

100克

奶粉

25克

清水

15克

细砂糖

20克

有盐黄油

20克

蛋液

15克

1.5克

小苏打

1.5克

玉米油(抹砧板)

适量

嘎嘣脆小饼干(无臭粉无泡打粉),不用晾凉就是脆的,儿时的味道的做法

  1. 将低筋面粉,小苏打和奶粉放入盆中,搅拌均匀



  1. 黄油,糖,清水,蛋液,盐放入小盆中,隔热水融化,热水不用煮沸,只要有温度,将盆内食材融化就可以了



  1. 将温热的液体倒入面粉盆中,用刮刀搅匀,然后揉成团,面团比较硬,不用过度揉,成团就可以了,装入塑料袋静置松弛20分钟



  1. 面团取出不用揉了,在烘焙垫上直接擀开,点子上要提前抹一层玉米油,擀面杖也要抹油,因为面团比较干,小心擀开,厚度3毫米,用模具压出饼干形状

  1. 烤盘加铺油纸,做好的饼干摆上面,用牙签扎小孔,每个饼干中间留空隙



  1. 中层,150度,烤10-15分钟,根据上色(我烤了12分钟)因为饼干的薄厚不同,所以用时很难确定,后面几分钟就要盯着看,微微上色就可以出炉了



  1. 烤好立刻取出,晾凉,我吃了一下,没晾凉的时候就已经很脆了



  1. 太小的宝宝不能吃,因为并不是那种酥的口感,但是很好吃,没有太多黄油就不会那么腻
