我是个大闸蟹的狂热爱好者 平时吃法都是直接清蒸,或者做成香辣蟹。有几次看到别人去上海或苏州探店,吃了传说中的蟹黄捞面满满的一大碗蟹黄倒进面里!那叫一个馋啊,但是一碗价格要几大百(ノ゚0゚)ノ~ 干脆我就自己做吧!!
抓住大闸蟹季的尾巴,搞一碗超满足的蟹黄捞面
(最后还附有秃黄油做法哦)
用料
大闸蟹(母蟹)
5只(10只也行啊)
料酒
1小勺
生抽
1小勺
适量
蚝油
1小勺
淀粉
1勺
耐心
很多
看上去很diǎo 实际不难的蟹黄捞面的做法
- 生猛捆好的大闸蟹,放锅里蒸熟,大概蒸二十分钟就熟了。(请勿水煮)
- 把蟹解绑,拿出祖传拆蟹工具 (没有的话,一把剪刀和一把叉子也行)
- 蒸熟了也看起来很生猛!连喵看了都孩怕
- 嗷嗷嗷~满满蟹黄拆蟹其实才是整个过程中最费时间和精力的,很多人在这步已经打起了最擅长的乐器退堂鼓 把蟹腿先剪下来放一边,蟹壳打开,去掉不能吃的部位:蟹腮,蟹胃,蟹心,蟹肠。(不懂的自己去度娘搜视频看)
- 把蟹黄和蟹肉仔细地挑出来,虽然挑了一个多小时,但看到满满一碗还是很有成就感的(算了下次不想做了)
- 挑完了肉,锅里下多点油,开始煸炒刚才剩下的蟹壳和腿。(这样可以让油更香,嫌麻烦可以省略此步骤)
- 把蟹壳捞出,蟹肉和蟹黄倒进去,开小火翻炒一分钟。调入料酒,盐,生抽,蚝油。

- 再把淀粉用一小碗水混匀,变成水淀粉。倒入锅里混合翻炒均匀(就是勾芡)。自己尝尝咸淡,淡了加盐,咸了加水。沸腾个两分钟就可以出锅了。
- 搞掂啦!金黄灿灿一大碗!省了几百块的成就感!
- 另外起锅下点细面条捞出装盘,把做好的蟹黄粉倒上去!啊!大满足(๑´ڡ`๑)
- 配宽面也好吃
- 如果不喜欢蟹粉,也可以做成秃黄油(就全是蟹黄)在步骤7的时候只放蟹黄就行了,其他步骤一致。
