做法还是比较简单的
推荐高压锅压完那一步一定要尝尝(无敌美味)
咸淡口这一步就用生抽找好就可以了
然后就直接开吃 不用在继续做下一步了!!
(下次我会换个版本 直接用葱油拌面的葱油和葱叶去代替排骨里的生抽和生小葱 压完直接用葱油炒一点 放排骨水大火收汁步骤去做 估计会更好吃)
用料
排骨
1斤
小葱
350克
生抽
3/4炒菜勺
姜片
4片
大葱段
2段
大料
1颗
大红袍花椒
5-10克
玉米淀粉
适量
香油
2小勺
葱烧排骨的做法
- 香喷喷的葱烧排骨
- 葱香浓郁
- 冷水下锅
葱花 姜片
烧开后中间捞出排骨不用关火
这样血沫会粘上的特别少
- 压力锅放一把大红袍
一个葱段
4片姜片
一颗大料
- 生抽适量 稍微多一点 大概3/4炒菜勺
因为要添没过排骨的开水
味道会淡的
- 热水清洗干净排骨
- 添没过排骨的开水
- 压力锅30分钟
- 时间到 手动排气 我的排骨不抗炖这个时间正好
有一说一 这一步就可以吃了
不需要再进行下一步了
这个时候吃无敌的香
- 小葱洗干净 擦干净水分
350克就够了
- 砂锅里放入葱白稍微多一点
剪成和锅差不多大的一段
- 不粘锅放半勺食用油
小火姜片 葱段煸葱油
- 葱白蔫巴了 就放葱叶
- 一直到这个状态
捞出扔掉
- 排骨粘一层玉米淀粉
- 小火下锅煎 一面定型就翻面
- 这个程度有些过了
要比这个轻 淀粉定型了就可以翻面
然后再定型就可以捞出来了
- 煎老了 nonono
- 砂锅烧热放2小勺香油
然后听到锅里有声音了
并且有香味
- 放入排骨

- 中小火盖盖子闷10分钟
能闻到葱味 别整糊吧了
不用填水 注意火力
- 淋一勺生抽在葱上面
然后翻拌给葱入个味道
- 翻炒几下
- 出锅了 饭张力十足
小贴士
排骨最好是肥瘦的静排
不要带大肉块的那种不好的排骨
我的图中一半静排 一半普通排骨
如果都是特别肥瘦的排骨 会非常好吃
高压锅压排骨的时候 咸淡口就要给够了
