不知道在哪儿看到说吃鸡爪看剧爽歪歪。一直对鸡爪念念不忘,趁着不上班,下午四点半就开始操作,半个多小时搞定。好吃到停不下来。真的,因为我吃了整整一盘,我这几个月都不太想吃鸡爪。所以食友们要歹之有度。

蚝油

红烧鸡爪 好吃又简单的做法

  1. 鸡爪去掉指甲,剁成两段,把上图配料备好。



  1. 冷水下过焯鸡爪,放入姜片和两勺料酒(我说的勺喝汤的勺大小)。水开后2-3分钟就行。捞出放入冷水中,最后沥干水分。



  1. ⭐鸡爪用厨房纸擦干(这一步不要省略哈!!!)也可以选择长时间风干,要不油花子到处乱窜。热油放入八角、花椒和姜片,炒香后放入鸡爪,翻炒5分钟左右。

  1. 翻炒中加入3生抽、2-3勺老抽、两勺耗油(都是小汤勺的量,基本不用放盐)、香叶和蒜瓣(来不及剥皮也可以的)干辣椒放入姜片的时候忘记放了,反正都准备了,扔进去,翻炒均匀后,加入一瓶听装啤酒,啤酒不够可以加点水,大火烧开(没有啤酒的放1-2勺料酒,大料再放点少量的香叶桂皮去腥哈)



  1. 大火烧开后,加入冰糖,改小火煮。大概20分钟,这一步到最后五分钟要看着火,防止烧干。可以尝尝咸淡,根据需要决定是否放盐)。还剩这么多汁的时候,大火收汁,加入点白醋是否更好,我加了没尝出来哈哈哈。



  1. 大火收汁后留点汁,关火盛出。找出要开的电视剧或者电影,开始邪恶的歹饭吧!
