果酱小餐包的做法

  1. 面粉、白糖、盐混合在一起用打蛋器充分混合。避免盐、糖与酵母接触。



  1. 拌匀后再放入酵母,继续混合均匀。



  1. 放入鸡蛋、淡奶油、牛奶等湿性材料。



  1. 所有材料先用厨师机低速搅拌揉成面团后,再用4档速度揉面大概8分钟左右,看看能拉出薄膜,这时候可以放入黄油。



  1. 放入切碎的黄油,低速搅拌至黄油与面团融合,转4当速度揉面大概5分钟,这时候能轻松拉出薄膜切不易破,将面团从厨师机中取出,揉圆放进发酵盒中。



  1. 发酵至两倍大,用手指沾面粉戳个小洞,看看不回缩,不塌陷说明发好了。



  1. 把发好面团分成均等的16个小面剂,揉圆,用保鲜膜盖住,我直接用发面盒扣住的,松弛15分钟。



  1. 松弛好之后,取一个小面团用擀面杖,擀成圆形的薄片。



  1. 取适量的果酱,放在面片中间,像包包子一样包住馅料,收口后,整成圆形将收口处朝下倒扣在模具里,依次包完剩余的小面包,将包好的面包均匀的放入烤盘里,面包之间留有空隙。



  1. 我用的是28X28的方形烤盘,这个量刚好16个小面包一盘。将全部包好的面包盖上保鲜膜,放入烤箱38度二次发酵大概45分钟。图中是二次发酵好的样子,因为放的不够整齐二发后挤成了不规则形状了。

  1. 预热烤箱上火175度,下火180度,25分钟。



  1. 出炉后晾凉装进塑料袋防止水分流失,如果一次吃不完建议放冷冻室冷冻,吃的时候拿出来解冻,或者直接烤一下就行,和新出炉的一样哦。



小贴士

吃不完的面包一定不能放冷藏室里冷藏,这样会加速面包老化,影响口感。可以冷冻,吃的时候在拿出来解冻,或者用烤箱考一下。
