根据朋友要求,周末来分享一道水煮鲈鱼菜谱!由于孩子不能吃辣,老母亲只能调减了麻辣份量,遗憾得很!关注我的会发现,其实和水煮肉片、水煮牛肉做法是差不多的,只是肉类不同,腌制料有点不一样而已。
家人都不喜欢买现成的鱼调料来用,喜欢自己搞起来,只是为了保持新鲜食材的本味,那些真的添加剂太多了,图省事的请掐了这段情绪。

家常菜之水煮鲈鱼的做法

  1. 葱姜蒜备齐。切小片,葱叶撕片,葱白切小段。



  1. 鲈鱼洗净切片,两次腌制。第一次:料酒,少许盐,葱叶,姜蒜片,白醋一点儿就够,20分钟后洗净,姜蒜片留着还要用的!第二次:料酒极少,毛毛盐和淀粉拌匀,10分钟即可下锅。



  1. 素菜洗净,金针菇切脚,芹菜切节,黄瓜切片,香菜切小段。



  1. 冷锅里放入姜蒜片和干花椒粒,开火去除水汽炒香,最后倒入食用油,放入干海椒节,八角和香叶,一起再次炒香。



  1. 放入豆瓣和白糖共同炒制10秒,放入热水或者开水,加入生抽,老抽,盐,胡椒粉熬煮3分钟,料汁这就煮好了。下鱼骨熬煮,中火最多3分钟左右,捞出后垫汤盆底。

  1. 煮素菜。先放入金针菇煮3分钟,然后放入芹菜和黄瓜,煮1-2分钟,捞出再次垫底。



  1. 最后煮鱼片了哈。1-2分钟即可!捞出放盆的最上层。



  1. 锅里放入大葱段和鸡精,尝尝咸淡再决定加什么调料,汤汁倒入汤盆。注意:表面还要撒入一层干辣椒面和干花椒面(不喜麻辣的可以不加,也可以直接加入蒜泥),我们喜欢还要加点炒过的白芝麻!



  1. 看嘛,鱼和菜都煮好了,辣椒面和芝麻都铺好了,麻辣口味随意嘛,现在就等热油“浇筑”就成功了。



  1. 锅里烧部分热油,均匀淋入鱼片,口味重的多放点油。最后一步是撒上香菜,完工!



  1. 仔细看,鲜嫩入味,菜品丰富,真的香死人喔,下饭下酒都是干得的哈!
