我老公是鸡翅膀的超级爱好者,一个人吃掉10-15个鸡翅轻轻松松,但是外面卖的鸡翅太贵了,一对最便宜也要7-8块,根本不敢放开了吃。为了满足他对鸡翅的爱,再加上我们这边超市正好翅中做活动,必须买买买让他吃个够。
外面的店为了省事都是做的奥尔良味道的,我们今天做点不一样的。都说食在广东,广东的各种酱料味道也是非常棒的,我特别喜欢沙茶酱,那今天就做一个沙茶鸡翅!
用料
鸡翅中
6-12个
姜粉
1勺
花椒粉
0.5勺
料酒
3-5汤匙
蚝油
1勺
沙茶酱
2勺
紫金椒酱
1-2勺
酱油
2勺
空气炸锅烤沙茶鸡翅的做法
- 准备好鸡翅中,超市买的鸡翅中最好泡1-2个小时,把里面的血水泡出去,这样做出来的鸡翅不会有腥味。把鸡翅的两面划几刀方便入味。一般大一些的空气炸锅一锅可以烤6-8个。
- 撒上姜粉,如果没有姜粉用切碎的生姜末也可以。
- 再放入一点花椒粉,根据鸡翅的量7-8个放小半勺就行。
- 倒入3-4汤匙料酒,如果没有料酒用黄酒或者是二锅头也可以,二锅头的话2汤匙就够了。
- 耗油来一汤匙。
- 沙茶酱来2汤匙,沙茶酱是有点点微甜的味道。
- 紫金椒酱来1-2汤匙,紫金椒酱是用大蒜和尖椒做的,有淡淡的蒜香和辣味,喜欢吃辣可以放2勺。
- 黄豆酱油放2汤匙,增加鸡翅的颜色。带上一次性手套把鸡翅抓拌均匀,让酱料沾到每一个鸡翅里面。用保鲜膜盖住小盆放到冰箱里面2-3个小时,让鸡翅中入味。不着急吃的可以头一天晚上腌制好 第二天烤制。

https://weibo.com/ttarticle/p/show?id=2309405160569769689202 - 腌制好了以后,带着手套再揉搓一下,让味道均匀一些。空气炸锅里面铺上防油纸,把鸡翅中摆进去。160-170度先烤10-15分钟,这个是让鸡翅的里面烤熟。中间记得翻个面。
- 10-15分钟后把温度调到180-200度,烤5-10分钟,中间记得还是需要翻个面,让两面都能烤脆烤到金黄。
这个温度是我家空气炸锅的温度,如果你家空气炸锅的功率低,可以适当延长烤制时间。
- 这样外表金黄香酥,内里汁水丰富的沙茶味烤翅中就做好了。配一杯小酒或者是气泡水开始享用吧!
小贴士
1)腌制时间最少也要2-3个小时,不然无法入味。
2)这个菜谱我没有另外放盐,因为我们家的口味比较淡,如果平时口重可以适量放盐。
3)各家的空气炸锅功率不太一样,我的温度和时间仅供参考,大家中间可以拿出来看看,熟了就可以了。
4)家里没有紫金椒酱的可以换成其他的有点辣味的酱,家里有啥都可以试试,没准就出来一个不一样的味道。
