甜酒酿的做法
- 准备糯米250克,多淘洗几遍,至水清澈
- 加水泡一个晚上(急的话泡4到6个小时也可以
- 泡好的糯米再清洗一下,沥掉水分,放进蒸烤箱蒸半小时
- 蒸好的糯米要像这样粒粒分明,不夹生,不过于软烂,待米饭晾凉后,戴上一次性手套将1克植物甜酒曲拌到米饭里混合均匀(不能拼命抓捏,就轻轻拌开即可)再加入125克凉白开继续拌开
- 把米饭轻轻压一下,不能压太紧,中间弄个酒窝,用于后期观察出酒情况。这里有个重要的点:米饭的量不能超出装它的容器的三分之二,否则影响发酵
- 盖上保鲜膜,放到一个密闭的地方发酵,我是放在闲置的电饭锅里,盖上盖子
- 发酵48小时后,观察出酒情况,根据气温不同,发酵时间会有所不同。如果酒窝里有酒了,打开保鲜膜闻下气味是不是有酒酿甜甜的味道出来,是的话就可以再加入125克凉白开,继续发酵6到8小时左右

- 做好的酒酿是甜甜甘醇的口感,如果没有很快吃掉,需要放蒸烤箱里蒸15到20分钟,阻止它继续发酵
- 蒸好放凉后装进高温消毒的器皿里,放冰箱慢慢吃。
